Quick Penne Bolognese

Ingredients
  

  • 1 tbsp Butter melted
  • 1/2 cup Mirepoix chopped Carrot, Celery, Onion
  • Sea Salt & Black Pepper to taste
  • 1/2 cup Whole Wheat Penne dry
  • 4 ozs Extra Lean Ground Beef
  • 1/2 cup Marinara Sauce
  • 1 tbsp Cream Half & Half

Method
 

  1. Cook the pasta according to package directions: 1) Bring half pot of water to boil, 2) add pasta and stir, 3) leave lid OFF and set timer for time listed on package, 4) stir pasta occasionally.
  2. While waiting for water to boil, heat a non-stick skillet on medium-high heat (level 6). Add one TBSP butter to pan and melt.
  3. Add 1/2 cup of veggie mixture (carrot, celery, onion) to the skillet and cook on medium heat for 7-8 minutes. Season with sprinkle of salt and pepper.
  4. Add 4 oz lean beef (or one beef burger patty) to the veggie mixture and break meat up with spatula or plastic spoon. Cook beef and veggies 7-8 minutes until meat is cooked through and browned.
  5. Add 1/2 cup marinara sauce and one TBSP half & half to the beef-veggie mixture and mix well. Let simmer on LOW (level 2) while pasta is cooking.
  6. When pasta is cooked, strain in sink and pour onto a plate or bowl. Serve the sauce over the pasta and enjoy! Season with Parmesan cheese on top if you like!

  • Use oil instead of butter and omit half & half cream.

Penne Recommendation

  • Choose whole grain or legume pasta such as Barilla Protein+ OR Barilla Whole Wheat OR Banza Pasta if possible. Choose brown rice or rice/corn blended pasta for gluten-free eaters.
